Have you ever tried grilling fruit? If not, this recipe takes fruit salads to new levels. It’s the perfect dish to serve at a party and whilst best served warm, any leftovers can be popped in the fridge for a lunchbox treat the next day.
Time – 10 minutes
Serves – 6-8
Ingredients
1 chopped pineapple
6 peaches, stones removed and cut into slices
1 mango, skin removed and cut into cubes
3 kiwis, skin removed and sliced
½ watermelon, cut into cubes
100g strawberries, chopped
100g blueberries
400g Greek Style Yoghurt
Honey (to taste)
Juice of 1 lime
Drizzle of sunflower oil
Pinch of salt
Directions
Prepare fruit and grill – Preheat a grill or plancha plate. Place the chopped pineapple, peaches, mango, kiwis and watermelon into a bowl, and toss with a drizzle of sunflower oil until all the fruit has a light covering. Carefully add the fruit to the plancha plate or grill!
Prepare the dressing – In a separate bowl, mix Greek yoghurt with the juice of one lime, and a drizzle of honey (however much is to your liking). This will be your fruit salad dressing.
Serve your fruit salad – Your fruit should be removed from the grill after 1-2 minutes on each side, and put straight into a large serving bowl. Add an optional pinch of salt to grilled fruit to enhance the flavour. When all grilled fruit is ready, add fresh chopped strawberries, blueberries, and top with your honey yoghurt dressing.
For an alternative pairing, walnuts and raspberries work especially well on this dish!
