Sizzling Steak Under the Stars: An Al Fresco Valentine’s Feast

As Valentine’s Day approaches, imagine a magical evening under the stars, warmed by the radiant glow of an outdoor wood burning grill.

Here’s a simple yet delightful recipe to make your Valentine’s evening special, combining the warmth of the fire with the charm of a home-cooked meal.

The Menu: Grilled Rosemary-Infused Steak with Side of Chargrilled Potatoes

For the Steak:

• 2 ribeye or sirloin steaks (about 1-inch thick)
• 2 tablespoons olive oil
• 2 cloves garlic, minced
• 1 tablespoon fresh rosemary, finely chopped
• Salt and freshly ground black pepper

For the Potatoes:

• 4 medium-sized potatoes
• 1 tablespoon olive oil
• Salt, to taste
• Fresh rosemary sprigs for garnish

Equipment:

• Outdoor dual wood burner and grill
• Grill tongs
• Meat thermometer
• Aluminium foil

Instructions:

1. Steak Marinade: Start by combining olive oil, minced garlic, chopped rosemary, salt, and pepper in a bowl. Rub this mixture generously over the steaks and let them marinate for at least 30 minutes, allowing the flavours to infuse.

2. Potato Preparation: While the steaks marinate, wash and slice the potatoes into ½ inch thick slices. Toss the potatoes in olive oil and a pinch of salt.

3. Firing Up the Grill: Light up your dual wood burner and grill. The wood burner will not only provide the necessary heat for cooking but also keep you warm and cosy under the night sky. Wait until the wood has burned down to a nice hot ember bed, perfect for grilling.

4. Grilling the Potatoes: Wrap the potatoes in aluminium foil and place them on the grill. They’ll need about 20-30 minutes to cook, turning halfway through. You’re aiming for a soft inside and a slightly charred exterior.

5. Grilling the Steaks: Once the potatoes are halfway done, place the steaks on the grill. As an approximate guide, cook them for about 4-5 minutes on each side for medium-rare, or until the internal temperature is around 55°C. The high heat of the grill will give the steaks a beautiful sear and lock in the flavours.

6. Serving: Arrange the grilled steaks and potatoes on a warm plate. Garnish the potatoes with sprigs of rosemary for an added aromatic touch. The rustic elegance of this dish, combined with the ambient warmth and light from the outdoor wood burner, creates the perfect outdoor Valentine’s setting.
