2. Potato Preparation: While the steaks marinate, wash and slice the potatoes into ½ inch thick slices. Toss the potatoes in olive oil and a pinch of salt.

As an approximate guide, cook them for about 4-5 minutes on each side for medium-rare, or until the internal temperature is around 55°C. The high heat of the grill will give the steaks a beautiful sear and lock in the flavours.
