Load up your taste-buds with a Mexican classic that always hits the spot! A classic spice combo and a build-it-yourself experience? This one will go down a treat with the whole family!
Time – 25-30mins

Ingredients
8 tortilla wraps
500g Chicken Breast, Sliced
250g Cherry Tomatoes
1 Sweet Bell Pepper
2 Small Red Onion
2tsp Smoked Paprika
1½tsp Ground Cumin
2tsp Ground Coriander
1tsp Oregano
1tsp Garlic Powder
Juice of Half a Lemon
3tbsp Olive Oil, plus a little extra for frying
2 Avocados
Juice of One Lime
15g Fresh Coriander
2 Red Chillies
Directions
Pre-prepare your vegetables – Finely slice your red onions and slice the bell pepper into long, thin strips.
Marinade the Chicken – mix the paprika, cumin, ground coriander, oregano, garlic powder and a pinch of salt, together with the olive oil and the lemon juice, into a flavour-packed marinade. Rub this over all the chicken, coating thoroughly, and leave to marinade for 15-20 minutes.
IMPORTANT: You need to wash your hands thoroughly before the next step, as you have been handling raw meat.
Heat Up the Grill – Heat up your sizzle pan or plancha plate, so you’re ready to cook!
Prep the Guacamole – While things are heating up, you’ll have time to prep your homemade guacamole. Start by finely chopping your tomatoes and one red onion, adding them to a mixing bowl. Skin and pit the avocadoes, adding the flesh to the tomatoes and onion, followed by the lime juice (this will keep the avocado as fresh as possible until everything is ready. Mash everything together with a fork, then finely chop the fresh coriander and chilli, spreading these over the guacamole.
Cover your bowl with cling film and pop it in the fridge to keep fresh.
Fry the Veg – Add a little olive oil to your frying surface, and let it heat up. Once hot, add your onions and fry them on a medium heat until soft. Add the pepper, and again, fry for at least five minutes until softened.
Add the Chicken – Use a utensil to add the marinade chicken slices to your cooking surface. Cook thoroughly for 7-8 minutes on each side. Stir the seasoning through the veg, and you’re almost ready to serve!
Warm up the Tortillas to Serve! – Warm up your tortillas in the microwave, or one-by-one on the grill. Now you can fill them up with your fajita filling and guacamole, and dig in!
