Mmmm… smell that? It’s that time of year again! In our opinion, Shrove Tuesday is one of the most underrated holidays. No matter who you are, it’s a great excuse to pig out on sweet, delicious pancakes! And hey, why not cook them in the great outdoors?
Without further ado, here’s how we get our pancake day crêpes perfect at Dragonfly. What’s more, we’ve listed some out-there topping ideas for those of you who don’t get excited for lemon juice anymore!
Time – 10 minutes
Serves – 4
250g Plain Flour
A Pinch of Salt
50g Butter (melted, then allowed to cool a little)
2tbsp Rapeseed Oil
Heat Things Up! – Start by heating up a plancha plate, or use a frying pan placed over a grill’s surface. Add half the oil and allow it to heat up.
Make Up the Mix – Put the flour in a bowl with the salt and sugar. Make a well in the middle, pour in the eggs and start mixing gently. When the mixture becomes thick and well-incorporated, start to add the cold milk little by little and keep mixing it through. And be careful! Adding too much milk at once may lead to lumps forming.
Once all the milk is mixed in, the batter should be fairly fluid. If it still seems a little too thick, add a little more milk. Then, add the melted butter and mix well.
Get Cooking – Pour a small ladleful of the batter onto your plancha/ into the pan, quickly swirling it around with a spatula into a thinly spread circle. When the pancake is golden brown around the edges, it is time to flip it. Let it cook for another minute on this side, and your pancake is ready.
Rinse and Repeat – Keep cooking the batter, one crêpe at a time, until it’s all used up!
