Speedy Lemon and Herb Sea Bass Fillets

Quick cooking and quality food aren’t always thought to go together, but a tender fillet of juicy sea bass cooked perfectly in just five minutes should put that assumption to bed for good. Try this recipe for a wonderfully balanced fish dish that’s fast, simple, and full of flavour!

Time – 20mins

Serves – 4

 

Ingredients

4 fillets of fresh sea bass

2 whole unwaxed lemons

1½tsp Dried Oregano

10g Fresh Flat-leaf Parsley

10g Fresh Dill

A thumb of Butter

1½tbsp Olive Oil

100g Plain Flour

Sumac to season (optional)

 

 

Directions

Getting things Prepped – Preheat a plancha plate to a medium heat and add the butter and olive oil. Chop up your fresh herbs, and juice and zest both lemons. Next, add the flour to a mixing bowl with some salt and pepper and stir together.

Pat your sea bass fillets dry with kitchen roll and coat them thinly in the flour mixture.

Fry the Fish – It’s already time to cook! Add your fillets to the plancha plate and fry them gently for three minutes on each side.

Add some Flavour – Once your fillets are off the heat, sprinkle on your oregano and share out the fresh herbs and zest across the fillets.

Season and Serve – Drizzle on some lemon juice and season with salt and pepper to taste. If you have any, add a dash of sumac to complement the tang of the lemon!

And that’s it – you’re done! Plate up and serve, perhaps beside some steamed asparagus and garlic bread.
